Every bottle of our Mendocino County Sauvignon Blanc restores 100 oysters back to the wild! Oyster reefs are a critical ecosystem and also help clean our oceans. A single oyster filters about 30 gallons of water daily. And by the way, eating oysters is good for the planet because you’re almost always eating farmed oysters, which are completely sustainable. Tasting Notes

From Brewer Vasili:

Volume eight, traditional headdress, is being released and I wanted to share some of my thoughts and impressions about it in hopes that you can learn from it some of what my intention was and share with our customers a bit about the beer.

This beer uses Golden Rod, which is an extremely common plant around here. It grows in every pasture. Most typically, it grows a single stalk about 3 feet tall, with thin, spear-like leaves radiating all up and down the stalk. The top is crowned with bright, almost fluffy yellow flowers. You have to look really close to see pedals. It’s another plant that can be used for tea and lends an anise like character. I harvested it in my backyard mostly, some from around the brewery. Spelt and honey are two other components in the beer. There is also hops at boil. As usual, this beer is fermented in an oak barrel with mixed culture.

Flavor
candied lemon peel and more anise up front, resolves to an subtle and soft dough character

overall
a light tart spelt beer with a balance of citrus and bright spice.

The label:
so while I was preparing the Goldenrod for this beer, I found this strange wad of plastic drinking straws and masking tape that one of my children had used for a school project. I had no clue what it was suppose to be. As I was stripping the leaves and flowers off of the stalks, I started putting the stripped stalks into the the straws. As I was getting through the stack of Goldenrod, it started to look like a type of headdress. Atlas, having known and worked with Bread and Puppet Theater for many years, which has a fair share of nature deity worship, and seen many a wreath made of plants, my mind naturally went there. This picture I painted with watercolors is a more or less accurate illustration of the stripped Goldenrod stalks sticking out or this drinking straw sculpture, which I learned was an attempt at a log cabin.

This is the perfect pint for cool Autumn days and the first flakes of the coming Winter.

Psychopomp – Sour Cherry Mead | Havoc Mead | 6.9% ABV – Gluten Free

Psychopomp is a sour cherry mead based on a traditional style of mead known as “Viking’s Blood.” Tart cherry blends smoothly with a dry honey body for a balanced, flavorful drinking experience.

Bitter Bee / Hop Swarm – Hopped Mead | Havoc Mead | 6.9% ABV – Gluten Free

Formerly known as Bitter Bee, Hop Swarm is a perfect combination of wildflower honey and seven different hops to create a balanced, crushable mead.

Unlike most beverages, the hops in this mead are never boiled, providing the complex taste of dry-hopping with none of the bitterness.

  • High Noon Kolsch – Malty with a kiss of noble hops and reasonable strength make this a balanced and delicious choice for any occasion. This is a great session beer and with the lower alcohol content you can enjoy a few.
  • Palomino Pale Ale – Amber Ale dry hopped with Amarillo, Sterling and Willamette. Layers of Pilsner, Vienna and wheat malts balance out the assertive hop aromas.
    Trailblazer Our amber lager – This brew won Silver at GIBF last fall.
  • Black Beer– 2014 Gold Medal at the Great International Beer & Cider Festival. A balanced, velvety, German inspired black lager / porter cross. Delicious ice cold, but the malt really stands out at warmer temperatures. Clean layers of dark malt, mocha, caramel and noble hops.

  • Big Belgian Draft – this Belgian-style dark strong ale won gold at GIBF last fall. Flavors of fresh malt and stone fruit mix with just a hint of spiciness from the special yeast strain (no spices added) and a smooth finish that leaves you wanting another sip…
  • Scotch Ale – A strong ale, malty, full bodied with a hint of smokiness. The big brother to Stone Corral Latigo. Pairs nicely with roasted or grilled meats, wild game, grilled smoked salmon, aged cheeses, French onion soup and deli sandwiches. This ale weighs in at 7.25% ABV.

Orval Trappist Ale

Sunset-orange color; a fruity and slightly acidic bouquet, firm body, profound hop bitterness, and long, dry finish.  6.9% ABV

About the Orval Trappist Brewery

Brewed and bottle-conditioned at Notre Dame d’Orval monastery, founded around 1070 AD in the pastoral Belgian countryside. Three different malts, two types of hops, Belgian candi sugar, complex fermentation with multiple yeasts, dry-hopping and bottle conditioning all contribute to great character and complexity. This vintage-dated and unique beer can be cellared up to five years.

According to legend, Princess Matilda was passing through this region in about 1070 with her retinue. She stopped at a clear spring and trailed her hand in the water – and her wedding ring, a gift of her recently-deceased husband, slipped off her finger and sank. Distraught, she knelt and prayed fervently for its return . . . and a trout swam to the surface with the ring in its mouth, returning it to her. She is said to have claimed “Truly, this is a golden valley!” (French: Or = gold; val = valley) She gave the land to the church, and the trout with the gold ring can be seen to this day in the Orval logo.

Westmalle – Est. 1794

>  In the early days of Belgian brewing, before universal literacy, two “x-marks” on a cask may have distinguished a “second beer style” made by a monastic brewery for outside sales, generally stronger than the original variety brewed for the monks’ consumption. Brewing historians think these marks may have been the root of two current beer styles: dubbels (doubles) and tripels (triples).
>   Dubbels are dark ales of firm strength and body; Westmalle Trappist Dubbel is amber-brown, has notes of caramel, earth and fruit, with a balanced body, subtle yeast character, and a refined, malty finish. 7.0% abv.
>  The Abbey of Westmalle that produced the first strong, pale-colored tripel (or triple), in 1934, and today Westmalle Trappist Tripel is the benchmark for the tripel style. It is a glowing golden color, very rich, full-bodied, and elegantly complex with elusive hints of tropical fruit in the bouquet; firm bitterness and snappy, aromatic hop finish keep the flavor elements balanced. 9.5% abv.

Rochefort – Est. 1230

The beers of Abbaye St-Remy, Rochefort, are packed with extreme flavors but each is melded into perfect balance.
>  Rochefort 6, sometimes called “Red Cap,” has a firm body with an unrestrained malty flavor and long finish; the bouquet holds fruity
yeast notes that suggest fresh-baked dark bread; 7.5% abv.
>  Rochefort 8, or “Green Cap,” is a full-bodied, rich ale with alcohol at 9.2% abv and compelling flavors of spice, bittersweet chocolate, figs and leather.
>  Rochefort 10, “Blue Cap,” packs sauvage, incendiary flavors around a bold 11.3 % abv — notes of earth, fire, port wine, violets, and possibly tropical fruit, all in cascading layers. The colors range from brown to deep blackish-brown, and all three have soft red highlights.  The numerical names of the Rochefort beers – “6,” “8,” and “10” – come from “Belgian degrees,” a traditional, historical means of measuring gravity (or, the sweetness of the wort before fermentation) and determining the final strength of the beer.
